Whisk the oil and vinegar together in a large serving bowl. Add the onion, cucumber, radishes, olives and strawberries. Season with black pepper. Set aside for 10 minutes.

Tear most of the mint leaves into the salad and mix gently. Break the Feta into large chunks over the top. Garnish with more mint leaves and serve with your favourite crusty bread if liked.
Cook’s Tips
Peel the cucumber if you prefer. You could use a British, crumbly white cheese, such as Wensleydale in place of the Feta.
